Ingredients / Shopping List
  • ½ cucumber - diced
  • 1 green pepper
  • 2 tomatoes
  • ½ red onion
  • 8 black olives
  • 4 ounce Feta Cheese
  • 12 flat leaves Parsley
  • 6 fresh mint leaves
Olive Oil Dressing
  • ¼ cup Olive Oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 teaspoon oregano - dried
Instructions
Directions/Method for Greek Salad with Homemade Olive Oil Dressing
  1. Clean and peel the cucumber with the vegetable peeler
  2. Quarter and cut the cucumber into bite size pieces and put in a bowl
  3. Clean and cut the green pepper into bite sizes and add to the bowl
  4. Clean and cut the tomato into bite sizes and add to the bowl
  5. Add the olives to the bowl
  6. Cut the red onion in half, peel off the skin and cut the onion into thin slices and add to the bowl
  7. Cut 4 ounces/25 gms of feta cheese into bite size cubes and add to the bowl
  8. Add the flat leaf parsley
  9. Break the fresh mint into small pieces and add to the bowlMix the contents of the bowl together
Oil Oil Dressing
  1. Put ¼ cup/60 ml of olive oil into a jar
  2. Add 1 tablespoon/15 ml lemon juice to the jar
  3. Crush and chop 1 clove of garlic and add to the jar
  4. Add 1 teaspoon/5 ml of dried oregano to the jarPut the lid on the jar and shake the contents together
  5. Pour the olive oil dressing over the Greek salad in the bowl and gently mix and serve
