- mayonnaise
- mustard
- 1 lemon or lime
- 1 - 2 sticks of celery
- 4 shallots

- 2 slices Bread – 2 slices of your choice

- pinch pepper
- 6 olives - sliced
- 1 small bell pepper (green, red, yellow
- 1 can crush pineapple - strained
Instructions
- Recipe 1 - for Chicken Salad Sandwich
- Makes 4 – 6 sandwiches
- Finely chop the chicken, the onion, the bell pepper, and the celery and combine in a mixing bowl
- In a separate small mixing bowl prepare the dressing by stirring together 4 tablespoons of mayonnaise, 2 tablespoons of mustard and 2 teaspoons of lemon or lime
- Pour the dressing over the ingredients and stir in
- Lightly butter 2 pieces of bread on one side each
- Spread the mixed ingredients onto one piece of the bread – salt and pepper to taste - and place the second piece of bread on top
- Cut the sandwich into squares, diagonally, lengthwise of into fingers place on serving dish and serve
- Leftovers can be covered and placed in the refrigerator for a later meal or snack
