- 1 pound potatos - cooked and cubedd
- ¼ cup celery - cut small bite size
- 1 green onion - chopped
- 1 hard boiled egg - chopped
- 1 strip Parsely - chopped fresh
- teaspoon lemon zest
- Cook 1 lb/1/2 kilo of potatoes in boiling water - when cooked allow to cool

- Cut the cooled potatoes into cubes and add to a mixing bowl
- Clean and cut 1 stick of celery into bite size pieces and add to the potatoes in the bowl
- Clean a green onion and using the scissors cut it into small pieces into the bowl
- Crack open a hard boiled egg and chop into small pieces and add to the bowl
- Clean the fresh parsley and dry - using the scissors cut it up finely into the bowl
- Wash and dry a lemon - using the zester, add lemon zest to taste to the bowl
- Gently mix the contents of the bowl.
- Pour just enough prepared Potato Salad Dressing to coat the contents of the bowl
- Serve immediately or keep chilled in the refrigerator
