Manfreed (in the Kitchen)
- ½ cucumber - diced
- 1 pepper - yellow
- 2 tomatoes - diced
- ½ Red Onion - diced
- 8 Black Olives
- 4 ounce Feta Cheese
- 12 leaves flat leaf parsely leaves
- 6 leaves fresh mint leaves
- ¼ cup Olive Oil
- 1 tablespoon Lemon juice
- 1 clove Garlic - crushed
- 1 teaspoon Oregano - dried
- Clean and peel a cucumber
- Slice the cucumber into quarters and cube to bite size and put into the bowl
- Cut the yellow pepper into bite size pieces and add to the bowl
- Dice the tomato and add to the bowl
- Cut the red onion into strips and add to the bowl
- Add the olives to the bowl
- Dice the 4 0unces/100 grams of feta cheese and add to the bowl
Mix the ingredients gently together - Pour ¼ cup/60 ml of olive oil into a jar
- Squeeze 1 tablespoon/15 ml of lemon juice into the jar
- Crush and chop one clove of garlic and add to the jar
- Add 1 teaspoon/5ml of dried oregano
Place the lid on the jar and shake well - Pour the olive oil dressing over the contents of the bowl
- Squeeze the mint leaves and beak into small pieces in the bowl
- Tear the flat leaf parsley into pieces over the contents of the bowl
Gently stir the contents of the bowl. - Open the Pita Bread and fill with the Greek Salad and serve.
